Tri colour Kulfi

What you need:

Large pinch of saffron
4 Cardamom
¼ Cup pistachios
½ Can condensed milk
½ Can unsweetened condensed milk
½ Cup heavy cream
½ Cup almonds, blanched remove skin
½ Cup powdered sugar
½ Cup food color saffron

How to make 

Slowly dry roast the saffron in a pan and then powder it. Powder the seeds of the cardamoms.
Blanch the pistachios in boiling water for 1 minute. Wash with cold water, remove skin and powder fine.
Place the condensed milk, evaporated milk, cream, almonds, sugar and cardamom powder in a mixer jar. Mix it 5 minutes till well-blended with each other. Your basic kulfi mix is ready. 
White layer – Pour in the white layer using one bowl of the kulfi mix that was refrigerated earlier 1/3 in mold and freeze.
Green layer – Add the powdered pistachios 3 bowl of kulfi mix and mix. Pour over white layer and freeze 
Your Tricolour Kulfi is ready to serve.

Tri color Idlis
What you need:

3 cups Idli batter
2 tbsp Tomato chutney
2 tbsp green Coconut chutney

For Tomato chutney:

2 Tomatoes
2 tbsp freshly grated Coconut
2-3 Red chillies
2 tbsp Chana dal
1 tsp Tamarind pulp
1 tsp Oil
Salt to taste

For Green Coconut chutney:
1 bunch Coriander leaves
1/2 bunch Mint leaves
1/3 cup freshly grated Coconut
2-3 Green chillies
1 tsp Tamarind pulp
Salt to taste

How to make :

Tomato Chutney:

Heat oil in a pan then add chana dal , red chillies and roast them  keep them  aside and Cool it.
Then add chopped tomatoes in the same pan stir fry till it become mushy and soft .Add tamarind pulp and switch off the flame. Let it cool for some time.
Grind all the ingredients with tomatoes, coconut and salt to a fine paste. 

Green Coconut Chutney:
Grind mint leaves, coriander leaves with grated coconut, green chillies, tamarind pulp and salt to a fine paste. 

How to make Idlis:
Divide the Idli batter into 3 equal portions (1 cup each) . Add 2 tbsp tomato chutney to one portion and 2 tbsp green coconut chutney to another portion and leave the 3rd portion as the plain idli batter. 
Put batter into each impression of idli stand. 
Place the stand in the steamer/cooker and steam for 10-12 mins.
Cool it and remove them slowly.
Arrange them in tri color as tricolor flag.
