Easy Summer Treat : High Calcium and High Protein Bite Size Sandwiches

Kids love lollipop!! Ever thought of making lollipop sandwiches? In this recipe, I have used pin-wheeled sandwiches to make lollipops. Also, it is strawberry picking season right now, and they are a perfect addition to this recipe to give color, flavor and healthy nutrients. You can make these in advance and pack for lunch, picnic or any other occasion. They taste great at room temperature and maintain their shape and freshness.

Pin-wheel sandwiches is the term used to describe the bite size sandwiches made by rolling bread/tortillas with a filling and then cutting into pieces. This makes these sandwiches snack size and very convenient for kid’s little fingers. Small size makes them a good fit for kid’s lunch box as well. The combinations are endless in both sweet and savory category.

These pin-wheel sandwiches do not require any cooking, but one should use healthy, fresh, natural and organic ingredients. Filling is made from strawberries, raspberries, cream cheeses and whipped cream. Quick internet search on average kid’s calcium intake will reveal that approximately 45 to 50% kids don’t get enough calcium in their diet according to Office of Dietary Supplements. Hence, kids should be encouraged to consume more calcium based foods such as cream cheese. Creme cheese, in addition to being a good calcium source, is also high in protein.
