Protein Rich healthy one-pot meal

Growing kids need high-energy food rich in protein. However, in a vegetarian diet it is often hard to come up with ideas for protein rich recipes other than lentils and beans. One option is Bajra (Pearl Millet), which is high in protein (11 g per 100 g) and gluten free. Pearl millet is also a good source of fiber, vitamins and minerals. It has complex carbs that takes longer to digest and kids feel fuller for long. Challenge is to come up with a simple easy to make healthy recipe that kids would love and is easy to eat/carry like a one pot meal.

Bajra (Pearl Millet) Khichdi makes a perfect, diabetic friendly and healthy one pot meal. In authentic recipe, rice is used which has been replaced by Freekeh over here. Freekeh is the latest addition to the category of super-foods. It is high in fiber, proteins, calcium, lutein (for eye health) and low in available carbs. Not to mention, the addition of all the mix-vegetables add to the overall nutritional value of the dish. This one pot meal is wholesome and hearty. In cold weather, this dish will give you the warm comfort and satiate your kid’s appetite.
